This fiery, flecked red jam is really a relish and it goes with a range of dishes. Try it with cold meats, bread and cheese or barbecued burgers. You can also serve it alongside fishcakes to add a little gentle heat.

Ingredients

  • 1 kg/2 lb 4 oz tomatoes
  • juice of 2

Method

  1. With a sharp knife, cut a cross in the top of each tomato. Put the tomatoes in a heatproof bowl and cover with boiling water. Leave to stand for 2–3 minutes, then drain. Peel off and discard the skins. Roughly chop the flesh.
  2. Put the tomatoes, lemon juice, chilli flakes and sea salt in a preserving pan and bring to the boil. Reduce the heat and simmer for 5 min
