Known as gulkand in India, where it is very popular, rose petal jam is made by leaving the petals in full sunshine. This is a version that doesn’t rely on such demands. It is, however, a jam to make if you have an abundance of red roses. Serve at a summer afternoon tea on sweet biscuits or meringues, or use as a cake filling with the addition of whipped cream and fresh strawberries or raspberries. You could scatter the tablecloth with extra rose petals!
