Ginger adds a warming kick to marmalade. Delicious on toast, this marmalade is also good stirred into natural yogurt or used in baked puddings.

Ingredients

  • 500 g/1 lb 2 oz oranges

Method

  1. Halve the oranges and lemons and squeeze out the juice and pips. Tie the pips, and any extra membrane that has come away during squeezing, in a piece of muslin/cheesecloth.
  2. By hand or using the shredding attachment of a food processor, thinly slice the orange and lemon peel, with its pith, into thin, medium or thick shreds, according to your preference.
