Intensely scented, this is passion fruit captured in a jar. For a delicious, super-quick dessert, serve a large dollop of this curd on top of Greek yogurt and add a generous sprinkling of blueberries.

Ingredients

  • 6 passion fruits 50 g/ oz unsalted butter, cut into small pieces

Method

  1. Cut the passion fruits in half and scoop out the flesh into a sieve standing over a bowl. Using a wooden spoon, push the flesh into the bowl. Reserve 1 tablespoon of the seeds and discard the rest.
  2. Sterilize enough small jars in the oven so that they are ready to use.
  3. Put the passion fruit juice, butter and sugar in
