A lovely way to use a glut of damsons, this cheese can also be made with any small plums you have. You can make apple cheese in the same way by replacing the damsons with apples and the allspice with ½ teaspoon ground cinnamon and ¼ teaspoon ground cloves. Alternatively, use a mixture of half apples and half blackberries for a stunning, dark bramble cheese. All can be served with cheese, pâtés, cold meats or roast pork.
