This luscious mincemeat is packed with plump apricots and orange, with a subtle hint of sherry, too. It makes a delicious change from the usual mincemeat that you buy. Use it to fill pies or baked apples.

Ingredients

  • 250 g/9 oz/heaped 1⅓ cups dried apricots

Method

  1. Using scissors, cut the apricots into small pieces and put in a large bowl. Add the grated orange zest and juice. Put the dried fruit and candied orange peel in a separate large bowl and add the sherry. Cover both bowls and leave to macerate for 24 hours.
