Vine fruits that are soaked in sherry for several days make this a heady mixture, and all the more delicious with juicy cherries and crunchy walnuts. Perfect for baked apples and pies. The longer you leave it to mature, the better.

Ingredients

  • 250 g/9 oz firm cooking apples, peeled, cored and grated

Method

  1. Put all the ingredients in a large bowl and stir well together. Cover the bowl and leave to macerate for 48 hours. Stir the mixture occasionally as you pass.
  2. sterilize enough jars in the oven so that they are ready to use.
  3. Pack the mincemeat into the warmed, sterilized jars, taking care not to leave any air bubbles.
