Serve this luxurious, traditional sauce poured over ice cream, hot puddings, gingerbread, pancakes and any other of your favourite desserts. Butterscotch sauce doesn’t have a long preserving life but, if you have any left over, you can freeze it and keep to serve with ice cream for a quick dessert.

Ingredients

  • 125 g/ oz unsalted butter, cut into pieces

Method

  1. Sterilize enough wide-necked jars in the oven so that they are ready to use.
  2. Put the butter, sugar, golden syrup and vanilla extract in a heatproof bowl over a saucepan of gently simmering water. Heat gently, stirring until the butter has melted, the sugar has dissolved, the ingredients are combined and the sauce is smooth.</
