Early summer is the time to make this cordial, when you will see elder shrubs and trees covered in pretty white flowers. Collect the flowers when just in bloom and use while very fresh so they retain their fragrant perfume. Elderflower cordial is delicious with sparkling water and Prosecco, and can also be added to fruit salads, fools and crumbles. It particularly complements gooseberries.
