This blackcurrant liqueur is what you use to make the French apéritif kir. Pour a splash of crème de cassis into a glass and top up with white wine. There is also Kir Royale, made with Champagne; Kir Pétillant, made with sparkling wine; Kir Normand, made with Normandy cider; and Kir Breton, made with Breton cider. Two other liqueurs that can be made in the same way are crème de framboise, with raspberries, and crème de mûre, with blackberries.
