A sweet and spicy chutney and, if you like ginger, you will find it difficult to resist another spoonful! It gets even better as it matures and is particularly good served with pork, as an accompaniment to curry or with cold meats, cheese and bread.

Ingredients

  • 600 ml/21 fl oz/scant cups red wine vinegar

Method

  1. Pour the vinegar into a preserving pan. Add all the remaining ingredients, stir together and slowly bring to the boil.
  2. Reduce the heat and simmer for about 2 hours or until no excess liquid remains and the mixture is thick. Stir from time to time to prevent the mixture from sticking to the bottom of the pan.
