This is a chutney for beetroot lovers. Lightly spiced and a wonderful vivid, ruby red colour, it is best served with pork or cheese, particularly goats’ cheese or a tasty mature Cheddar. If you have a little over when you come to putting it in the jars, save it to serve warm with, for example, roast pork, grilled sausages or a beef stew.
