The beetroot is crunchy and sweet with just a minor kick added by the horseradish. It is a relish that is excellent as a cold accompaniment with smoked fish, cold meats or cheese. You can also warm it to serve with roast beef.

Ingredients

  • 500 ml/17 fl oz/2 cups red wine vinegar

Method

  1. Pour the vinegar into a preserving pan. Add all the ingredients except the horseradish, stir together and slowly bring to the boil.
  2. Reduce the heat and simmer for about 15 minutes until the apples start to soften.
  3. Add the horseradish, bring to the boil and boil for about 15 minutes until the mixture is thick and no excess liquid remains in the bottom
