Is it a marmalade, a relish or a spread? It doesn’t really matter as this sweet and tangy caramelized onion preserve is very versatile. Not only can it be served cold or warm but it is great with almost everything!

Ingredients

  • 1 tsp caraway seeds
  • 170 ml/ fl oz/ c

Method

  1. Put the caraway seeds in a non-stick frying pan and dry-fry for about 1 minute, tossing continuously, until lightly browned.
  2. Put the vinegar, toasted caraway seeds, onions, cloves and salt in a large, heavy-based saucepan and slowly bring to the boil. Reduce the heat and simmer gently for about 2 hours, stirring occasionally, until the onions are soft and brown
