A relish for those who love aubergines. It is so delicious you may want to eat chunks straight from the jar! It is good served with antipasti, cheeses or curries. Add chopped fresh chilli with the garlic if you like extra heat.

Ingredients

  • 1 aubergine/eggplant, cut into chunks
  • 2 red peppers, halved lengthways, deseeded and roughly chopped
