Often served at Christmas time, and for good reason, as these are an excellent accompaniment to cold turkey and ham on Boxing Day. Also try slicing the pickled pears and adding to leaves tossed with crispy bacon and walnuts.

Method

  1. Sterilize enough wide-necked jars with non-metallic, vinegar-proof lids, or preserving jars, so that they are ready to use.
  2. Put the pears in a large, heavy-based saucepan, cover with boiling water and bring to the boil. Reduce the heat and simmer for about 5 minutes until beginning to soften. Drain well and leave to one side.
