The traditional accompaniment to roast beef and smoked fish - they aren’t the same without it. Be careful not to touch your eyes while preparing the horseradish, as it can really sting, and wash your hands well in warm soapy water after you have grated it.

Ingredients

  • 1 tsp salt
  • 225 g/8 oz horseradish root

Method

  1. Sterilize enough small, wide-necked jars with non-metallic, vinegar-proof lids, or preserving jars, so that they are ready to use.
  2. Fill a large bowl with about 600 ml/21
