Serve these delicate, sweet pieces of ginger with coffee, as you would chocolates, or they also make a wonderful addition to cupcakes, cookies, muffins, ice cream and even your morning bowl of porridge.

Method

  1. Using a sharp knife, a mandoline or the slicing attachment of a food processor, thinly slice the ginger.
  2. Put the ginger slices into a large, heavy-based saucepan. Pour in enough cold water to just cover the ginger, bring to the boil, reduce the heat, simmer for 10 minutes then drain and discard the water. Repeat the procedure one more time, but reserve the liqu
