Useful throughout the year for flavouring soups, stocks and stews, you can adapt your bouquets garnis according to which herbs you grow. This is a classic combination.

Ingredients

  • 1 bay leaf twig, 4 thyme stalks, 2 rosemary sprigs, 2

Method

  1. Tie the herbs together with string, put in a paper bag and dry as in the recipe above.
  2. Leave for about 3 days until dried. Put in a small square of muslin/cheesecloth and tie with string.
  3. Store the bundle in an airtight jar in a cool, dark place for up to 1 year. Use as required.
