Keeping cheese in oil excludes air and prolongs the freshness of the cheese. The other advantage is that the oil and herbs impart a wonderful flavour to the goats’ cheese. Delicious served with salad for a light lunch or snack.

Ingredients

  • 4 x 125 g/ oz soft goats’ cheese logs, halved widthways
  • 2 rosemary sprigs

Method

  1. Sterilize a 1 l/34 fl oz preserving jar so that it is ready to use.
  2. Put the cheese in the warmed, sterilized jar. Add the rosemary spri
