This is a short-term preserve that uses the method of excluding air and moisture under a layer of clarified butter. You can either store it in one dish or individual dishes, and it makes a delicious starter or light meal. Serve with brown bread or melba toast.

Ingredients

  • 1 tbsp olive oil
  • 175 g/6 oz unsalted butter
