Oatcakes are another version of the digestive biscuit hailing from the oat-loving (and growing) Scots. Is it a cracker? Is it a cookie? Both, I guess, which is why I try to keep some on hand for a daily late-afternoon snack or as an accompaniment to a cheese plate for guests. I’m pretty sure I was reacquainted with oatcakes via Jessica Battilana’s wonderfully useful book Repertoire and I’m sure her recipe has influenced the one I use.
