This cake is an old James Beard classic that I found via his foundation’s cookbook, Waste Not. The only thing that can be a bit of a hassle is boiling the oranges and puréeing them. I’ve started doing that whenever I have a couple of oranges or clementines that are getting a little sad, then freeze the purée, which gives me the ability to whip up this cake on a whim.
