I inevitably have a container of stray egg whites in the back of my fridge. This cake is the perfect way to hoover up those whites, and the stark-white, spongy cake pairs well with just about any fruit you have on hand.

Method

Preheat the oven to 375°F [190°C].

Into a medium bowl, sift together the flour and powdered sugar.

In the bowl of a stand mixer fitted with the whisk attachment or using a handheld electric beater, whip the egg whites until foamy. Add the cream of tartar and salt and co
