This burnished and tangy cheesecake is fluffier than a traditional New York cheesecake and pairs just as well with any fruit, so this is a recipe to keep in your back pocket when nothing else is jumping out at you. I don’t own a springform cake pan, so I bake this in a regular cake pan and it works fine. Maybe it is harder to get the first slice out, but that’s really about it.
