This recipe is based on the Belgium almond cookie, pain d’amande, but uses ginger instead of almonds. If you want to make the almond version, substitute vanilla for the ground ginger and sliced almonds for the candied ginger. I like them both ways, but an almond-ginger combo version is too much.

  • 8 Tbsp (4 oz [120 g]) salted butter

Method

Line a 9 in [23 cm] loaf pan with plastic wrap.

In a medium saucepan over medium-low heat, melt the butter with the sugars, ground ginger, and
