Pecan Sandies

Pecans might be my favorite nuts. Buttery cookies might be my favorite cookies. Logic would go that a buttery cookie studded with pecans would be my favorite cookie, and these are! I like to roll the dough into a log, freeze it, and then slice it into coins to bake. This ensures perfectly round cookies as well as having a bit of cookie dough in the freezer whenever you find yourself with unexpected guests or some extra fruit that needs a crunchy counterpart.
