My Grandma Hazel used to dip this in chocolate and call it sea foam candy. Undipped, it is usually called honeycomb. It is effectively peanut brittle without the peanuts and flavored with honey. I rarely eat big pieces of it anymore, but instead use it to add texture to simple desserts.

Ingredients

  • 1½ cups [300 g] sugar

Method

Spray a baking sheet with cooking spray or line with parchment paper or a silicone mat.

In a large saucepan, combine the sugar, honey, and ¼ cup [60 ml] of water and bring to a boil over high heat,
