Like many of my favorite foods, crème brûlée is elegant in its simplicity, which leaves little to hide behind if poorly executed. Tips: Take care with the custard. Always bake in a bain-marie. It is a bit fiddly but provides the even, gentle heat needed to best support a silken filling. Cook the custards less than you might think. The filling should have a jiggle in the center when gently shaken to test for doneness; cooking for longer results in a grainy, curdled mouthfeel. Chill completel
