There’s an old industry joke: “How can you tell a restaurant doesn’t have a pastry chef on staff?” Answer: “Panna cotta.” It’s usually true because panna cottas are easy and don’t require a ton of technique to achieve beyond using gelatin successfully. It also always feels like a decadant treat despite its simplicity, which makes it perfect for home entertaining.
