Citrus-only sorbets don’t conform to the “should work” ratio, so I use this recipe for lime or lemon sorbet. I like ginger with lime, but not so much with lemon. For lemon sorbet, I make it the same way and just skip the ginger ale.

Ingredients

  • ¾ cup [150 g] sugar
  • Zest of 1 lime
  • ¾

Method
