Name: Lime Sorbet
Ingredients: ¼ cup [60 ml] ginger ale, the spicier the better (preferably Blenheim or Vernors); ¼ cup [60 ml] ginger ale, the spicier the better (preferably Blenheim or Vernors); ¾ cup [150 g] sugar; Zest of 1 lime; ¾ cup [180 ml] lime juice, freshly squeezed, not bottled; ¼ cup [60 ml] ginger ale, the spicier the better (preferably Blenheim or Vernors)

Citrus-only sorbets don’t conform to the “should work” ratio, so I use this recipe for lime or lemon sorbet. I like ginger with lime, but not so much with lemon. For lemon sorbet, I make it the same way and just skip the ginger ale.

Ingredients

¾ cup [150 g] sugar
Zest of 1 lime
