Meringue can be a bit of a tricky devil because it’s only made of three ingredients: egg whites, cream of tartar, and sugar (and maybe some flavors). This means technique plays a critical role. That said, once the technique is mastered, meringue serves many purposes in a kitchen. It can be the marshmallowy topping for a curd tart (often lemon) or pie. It can be dried out and used for texture on a strawberry sundae. It can even be filled with chopped nuts and baked for a cookie-like option.<
