Butterscotch Pudding

While we’re talking about underappreciated, enter butterscotch pudding. I love it. Others say it reminds them of grandparents (implying some sort of ageist insult). Most have never had real butterscotch pudding. So here goes. Read the instructions twice because it will look bad, but if you follow along, it will come together. Like all things caramel, hold your nerve and let the caramel really smoke. This is the only chance you have to control the darkness and flavor of the finished pudding.
