I like a boozier brandy syrup and so use the following ratio and method. If you want it to be less strong, use less booze. If you want to cook out the heat of the brandy, add it with the water at the beginning of cooking. Sometimes I add slices of lemon or orange or warming spices, but that’s really on a case-by-case basis.
