Marigolds are one of my favorite botanicals to infuse into syrup because the flavor is so unique yet familiar—it tastes so clearly of tangerine, but is also herbaceous. Plus, a syrup is a good method to preserve the citrus flavor for use long after the plants have withered. If you don’t have access to marigolds, substitute with Citrus Syrup.
