I’m a big fan of wide, flat platters of salad versus a deep bowl of salad. Building the salad in layers ensures equal distribution of the ingredients whether you’re the first person served or the last. This salad can be made with any sort of crouton if you don’t have pumpernickel, but I love how the dark brown crouton looks against the stark white of the goat cheese.
