This is my favorite style of dessert: some fruit, something creamy, and something crunchy. As the apples are not all that sweet, I often pair them with some yogurt and nuts in the morning for breakfast or spoon them over a bowl of oatmeal.
In a medium saucepan, combine the cider, honey, cinnamon, star anise, and peppercorns. Bring to a simmer over medium heat. Slip the apples into the poaching liquid and cook until tender but not collapsing, about 8 minutes. Remove from the heat and let the apples cool in the cooking liquid to room temperature, then refrigerate until cool.
To serve, divide the cream among four serving bow
