Shattering cheese is cheese wrapped in phyllo and baked until melting underneath a crackling crust. While just about any firm, melty cheese can be turned into shattering cheese, I like the Finnish bread cheese juustoleipä best. Halloumi, paneer, or even a Brie-style cheese can be used in its place.
Lay the first sheet of phyllo dough on a cutting board or counter so the long sides of the rectangle run left to right. Brush with olive oil and season with a pinch of salt and pepper
