TBH you could skip the rosemary and the cookies and just serve a big bowl of apricots swaddled in honey sabayon, but it is those unexpected pops of flavor that pique my interest. Not flavors that will crane anyone’s neck, but a little something to catch an eye and turn a sly smile.

When making the sabayon, replace the sugar with honey and add the chopped rosemary.

Halve the apricots and remove the pits. Cut the fruit into wedges.

Divvy half of the apricots among four serving bowls. Spoon the sabayon evenly over the apricots. Top with the rest of the apricots. Sprinkle each bowl with a pinch of flake salt. Crumble an almond brutti ma buoni cookie over each
