Hands down, this is my favorite pie. I love tart fruit. I love flaky pastry. I love making pie. I don’t love pitting cherries, but I can often find already pitted frozen cherries and so problem solved. I like this pie warm with a big ball of melting ice cream. I also like it at room temperature for breakfast. I don’t even mind it when it is too sweet, although it is better when it isn’t.
