I’ve made a variety of different cocktail cherries with different liquors and spices. But honestly, I like them best with sweet vermouth, which helps keep the sweetness and spices balanced with a bit of bitterness. If you swap another liquor (like bourbon, brandy, or rum), add some warming spices (cinnamon, star anise, nutmeg, clove) to the mix.
