Full disclosure: When we made this for the photo shoot, we wanted the lime-green color of store-bought sorbet. You should also feel encouraged to buy the sorbet if you want to.
In a medium bowl, combine the honey, olive oil, and grapes and let sit for 10 minutes or so to encourage the grapes to give up their juice. Add the mint leaves.
Divide the lime sorbet among four dessert bowls, cups, or jars.
To serve, top the sorbet with the grape salad, a big pinch of salt, and an extra drizzle of olive oil to garnish each dish.
