Red Cabbage Salad w/Ground Cherries, Cilantro, Pepitas + Lime

I started making this salad when ground cherries were available but then liked it so much that I kept making it well after their season had passed. Simply substitute cubes of very ripe melon, pineapple, dried apricots, dates, or chunks of apple for the ground cherries.

This salad wilts quickly after being dressed, so either dress it just before serving or expect it to be more slaw-like in texture. This salad is hearty enough on its own but also pairs well with seared fish, grilled m
