This cheesecake bakes at a high temperature for a good, long time to get a burnished crust. This is the perfect opportunity to roast some ground cherries right alongside the cake for maximum efficiency. Note that the cheesecake takes a while to cool, so be sure to plan ahead or just be fine with slices that won’t come out cleanly.
While the cheesecake is baking, place a medium, ovenproof frying pan in the oven to preheat for 10 minutes.
Remove the pan from the oven and add a glug of olive oil. Add the ground cherries and rosemary and return to the oven. Roast the ground cherries until they burst and the liquid is reduced to a syrup, about 10 minutes.
