In a large pot, combine the cantaloupe and honey and bring to a simmer over medium heat. Split the vanilla bean and scrape the seeds, then add both the bean and the seeds to the pot.
Simmer for 1 minute, then remove from the heat and cool and chill in the fridge overnight (this helps keep the large pieces of cantaloupe intact in the final jam).
The next day, return the cantaloup
