A little bit of spice and a little bit of salt lift the sometimes one-note sweetness of fruit. Nectarines (or use peaches) often have an acidity and tannin that becomes more pronounced when paired with savory flavors. If you know me, you know I love a cabbage salad, often filled with some sort of legume. It is inexpensive, filling, and lasts for leftovers. I like this salad on its own or paired with any sort of grilled meat or fish, stewed white beans, or slabs of fried tofu.
