Both plums and cauliflower will weep moisture as soon as they are cut and come in contact with salt. For that reason, this is a salad best tossed together just before eating to keep the disparate textures intact. That said, the resulting pool of liquid at the bottom of the bowl—sweet plum juice and piquant mustard—is a real treat and should not be overlooked.
