I pull currants from the freezer right as I’m ready to switch gears from summer to fall, which just so happens to be exactly the best time to eat acorn or delicata squash. This dish can be made with any variety of squash and also made with cranberries, or frozen currants or gooseberries, if their season has come and gone. Note: I would also add a few spoonfuls of cooked wild rice, buckwheat, or lentils to make it more hearty, but this dish is perfectly good on its own, so don’t feel compell
