Gooseberry Fool w/Tortas de Aceite

I remember learning about fool when I was in cooking school and, like the impetuous student I was, raised my hand and said, “So, it’s just whipped cream and stewed fruit?” One of the other students chimed in, “Well, it’s nicer than that sounds.” It’s true. Fools are dead simple but more than the sum of their parts. Gooseberry fool is my favorite, maybe because it reminds me of my time in England, but more likely because gooseberries are so tart that they foil perfectly against billowy whipp
