If you hail from anywhere near lebanon, Pennsylvania, you will most likely recognize this dainty confection, which is native to that area. Although it’s a bit of an undertaking, even with the streamlining I’ve done in this recipe, it’s so fun to make and perfect for holiday candy-making. Opera Fudge’s creamy, light texture is really more like that of a fondant or vanilla buttercream candy filling than a true fudge, but that’s neither here nor there, because this stuff is so, so good.
